A sales guy suggested that I get a 2" diagonal for my C8. He suggested that the difference would be "astounding". What do you think? Worth the cost?

The difference between a 2 inch eyepiece and a 1.25 inch eyepiece can indeed be "astounding"... but mostly to your wallet, those things can be expensive.... By the time you buy the diagonal and the eyepiece, your wallet will be "astoundingly" lighter...

Looking through the eyepiece, one 2 inch eyepiece in addition to a reasonable set of 1.25 inchers is about all that one needs.

For the SCT, I think a better solution is a F6.3 focal reducer/corrector. These are around $100 on Astromart and reduce the focal ratio to F6.3 which increases the field of view proportionately and corrects some of the aberrations inharent in the SCT design.
