What happened? Widefield/Digital Rebel

Last night was my 1st attempt at widefield astrophotography with my Digital Rebel on a barndoor mount. Can anyone explain what went wrong? With exposures of about a minute or more the image starting saturating like it was overexposed (see example). Light pollution was minimal, with a street light at as house to my back.

Canon Digital Rebel 300D
18mm f3.5 ISO1600 2 minutes

Todd, the photo does look like sky fog (light pollution)! at ISO 1600 and f/3.5 you have a huge hungry CCD! The Rebels are very sensitive.
