I know one topic that can come up is outreach vs. inreach. Is a club balancing the needs of its members with the desire to provide education for the community?
For clubs that do participate in outreach another good topic is prevention of volunteer burn-out.

Maybe try to contact a local science teacher at a high school/college and enlist their help in finding someone artistic to build one that could earn extra credit for the teacher's class for the project.
If all else fails buy a huge styrofoam ball at a craft store, use some thick acrylic paint to color it and then use thousands of tiny styrofoam balls on skewers for all those moons.
