I used to enjoy miles of cross country skiing on the Oakland University grounds. Start at Meadowbrook Mansion, head through the golf course and into the woods - there were miles of groomed trails (you could also make your own). Man, I used to love cross country skiing out in Colorado. We'd pick a road, drive up to where it was closed, and ski the rest of the way up. Definitely used to enjoy winter a lot more when I was there than I do here. Northern Michigan is nice, but too far for a day drive to go skiing.
