Darks

You can get by with one. But a Median combine of three is better because it takes care of any variations in the chip. With your ST2k you can make a dark frame library. On those rainy nights set the cooler to a temp that you know the camera can reach on any given night and make your darks. I always did 3 at different exposures lengths ( 1,2,5,10 and 15 minutes). When its time to image, no darks needed as long as you image at the same temp as the darks. A big time saver!

I like the one shot color cameras but they are more suited for dark skies. I however live 5 minutes from downtown St.Louis. And I had a half moon to deal with also. There was a very bright blue gradient on the left of the image from the moon. But with all the available software for imaging and LP removal even color cameras can get a fair result. I used a IDAS LP filter and an IR/UV block filter as well. I used 15 min subs and the images were fully calibrated. Which is very important for color imaging.
Maxim 4.5 for acquisition and calibration
CCDOPS for combining and color processing
Photoshop CS for gradient removal and some noise subtraction
NeatImage for the finishing touch.

How Much More Difficult To Image At f/11.4?

That depends on the mount you are using. Your C11/st8 combo is imaging at .58 arcsec/per pixel at F/11.4. That is way over sampled and unless you have some excellent sky condition your just making it harder with no gain at all. Binning the ccd or the .5 reducer gets you closer to a more realistic resolution and makes the joy of imaging easier and more fun. Like it's supposed to be:-)
