Anyway...four words as far as camping:
Big Bend National Park!

Great scenery. Mountains. Desert. Wildlife.

I'll second that. Big Bend has outstanding skies, and the park is big enough to spend a lifetime exploring. A little farther north, Davis Mountains State Park is another option, especially for observing.
